Instructions:

  1.     Preheat oven to 350 degrees F.
  2.     Cut avocado in half with pits removed and scoop out 1/3 of the meat of each half. You will want to create enough space for the egg to fit inside.
  3.     Crack 1 egg into each half avocado and sprinkle with cheese, salt, and pepper over the tops of the eggs.
  4.     Bake for 12-15 minutes, until the egg white is set and no longer jiggles when you shake the pan.

Lunch: Zucchini Boat

Ingredients:

  •       2 medium zucchini
  •       ½ lb ground turkey
  •       ¼ c chopped onion
  •       ¼ cup chopped mushrooms
  •       ½ c tomato sauce
  •       1 tsp. garlic powder
  •       ¼ tsp. cayenne pepper (if you desire spicy)
  •       Salt and pepper to taste
  •       1/8 c shredded low-fat mozzarella cheese

Instructions:

  1.     Preheat oven to 250 degrees F.
  2.     Cut zucchini in half lengthwise.
  3.     Scoop out pulp, leaving ¼ in shells.
  4.     In a large skillet, combine ground turkey, onion, mushrooms, and seasoning. Cook until turkey is no longer pink, but brown.

Dinner: Meatballs

Ingredients:

  •       ½ lb lean ground beef
  •       ¼ c. chopped onion
  •       1 garlic clove (peeled and minced)
  •       1 egg
  •       1 tbsp parmesan
  •       1 tsp Italian seasoning
  •       1 tsp salt
  •       Pinch of pepper

Instructions:

  1.     Preheat oven to 400 degrees F.
  2.     Mix together onion, garlic, egg, cheese, ground beef, and seasoning in a larger mixing bowl.
  3.     Form into one-inch balls and place on greased cookie sheet.
  4.     Bake for 15-20 minutes or until meatballs are browned and cooked through.
  5.     Serve with steamed or stir-fried vegetables.
